Quick Restaurant Style Salsa

Tacos again for dinner!  You know the recipe if not, it’s here.

 Salsa is the No. 1 Condiment!

It was raining & storming. 

I was out of Salsa!

Since I didn’t want to get out, I remembered a recipe I have been wanting to try.   This had nice flavors.  Nothing was overbearing but it was very tasty.  Of course, this is my adaptation.  Just can’t leave a recipe alone…

This salsa is so good I had to cut a few corn tortillias into strips and fry for dipping.

There seems to be one major problem with this salsa! 

It would not be hard to see myself sitting down with a bowl of this and a bunch of fresh chips! 

I could pig out on this!


Quick Restaurant Style Salsa

1 (14.5 oz. can) sliced Stewed Tomatoes

1 (10 oz. can) Rotel Tomatoes

1/4 cup onion

1/4 cup cilantro, roughly chopped

1 rounded tablespoon minced galic

1/2 jalapeno, largely chopped (leave the seeds for a hotter salsa)

1 dash sugar

1 dash salt

1 dash cumin

1/4 lime juiced

Throw everything in the food processor and pulse 4 to 6 times.  I pulsed mine 6 times and it was just right for this salsa and taco lover.  Taste  and adjust seasoning if needed.

Pour in a jar and refrigerate for 1 hour before serving.

Yield:  3+ cups (Just use a quart jar and you will be fine.)
